Sweet Potatoes with Lentils | Easy Vegan Recipe for Fitness & Health

Vegan Oven Baked Sweet Potato filled with lentils – High Protein Recipe for Fitness and Health.
Lentils are my go-to vegan protein source and I always like to find new ways to cook them. This recipe takes a little longer than usually (~45 min) but still it is super easy and worth the effort.
The sweet potatoes taste amazing when roasted in the oven and the lentil stew is just amazing and adds lots of protein. Perfect for a vegan meal prep for example.

Protein: 40g
Carbs: 110g
Fat: 12g
Kcal: 721

Ingredients:

2 medium sweet potatoes
1 tsp salt
1 tbsp olive oil

250g brown lentils (Pre-Soak them)
1 cup vegetable stock
2 small or 1 medium onion
1 garlic
1 tbsp coconut oil
2 medium tomatoes
1 medium zucchini
100g spinach
1 tsp salt + pepper
½ lemon

Toppings:
Coconut Yoghurt/ Coconut Sour Cream 3-4 tbsp
Dill
Parsley
